8/ Trang Tran’s Bun dau Co Khan
For those who love the dish of vermicelli with fried tofu and shrimp paste, the Bun dau Co Khan restaurant is probably not unfamiliar anymore. Bun dau Co Khan can be said to be the pioneer of vermicelli with fried tofu and shrimp paste in Saigon and has created a craze until now. This restaurant of the artist was opened by actress Trang Khan with the aim of bringing her favorite Hanoi dish to the food connoisseurs of Saigon. Until now, Co Khan is still a brand that is irreplaceable when it comes to Bun dau mam tom.
Starting the business of bún đậu (vermicelli and tofu) in 2012, Trang Tran is one of the few successful people who brought this northern-flavored dish to Saigon. Despite the decline in popularity of this dish, bún đậu Cô Khàn still attracts a steady stream of customers every day. A portion of bún đậu here includes: vermicelli, fried tofu, steamed pork leg meat, fried pork sausage, and fresh vegetables. In this dish, the tofu is the most important component. If the tofu is not good, the whole dish is considered a failure. The tofu at Cô Khàn is already famous for being delicious. The homemade tofu is both creamy and fragrant. It is fried to be crispy but not greasy. Next is the vermicelli, which is equally important. The vermicelli is tightly packed and has a slightly fatty taste. The steamed pork leg meat is large and tender. The pork leg meat is tastier than regular pork belly, less fatty, and chewier. The fried pork sausage is always delicious. It is chewy and has a slightly fatty taste. It also has a very distinctive aroma. The shrimp paste sauce at the restaurant is perfectly balanced. Take some vermicelli, pork leg meat, fried pork sausage, tofu, and fresh vegetables, dip them in the shrimp paste sauce with a little bit of kumquat, and you won’t be able to resist. Remember to eat all the dishes together, don’t eat them separately, so you can fully appreciate the balance of flavors from the ingredients. If you’re still hungry, you can order a plate of fried pig intestines for 40,000 VND. The fried pig intestines here are crispy and have a slight bitterness. When dipped in the shrimp paste sauce, they taste amazing. If you know how to drink beer, you’ll definitely enjoy it even more. The general feedback from customers who visit this artist’s restaurant is that the food is delicious, reasonably priced, so you can enjoy it with peace of mind.

Owner Mai Phương Thúy meticulously cares for her restaurant from chopsticks to porcelain bowls, ceramic cabinets… All evoke memories of Vietnamese homes from decades ago. The restaurant plays music by Phạm Duy, Trịnh Công Sơn, Ngô Thụy Miên… as if the music blends with the space.
Not choosing a distinct regional culinary taste like other restaurants, this Saigon restaurant gathers cuisine from all three regions. This makes many people worry about the taste, uniqueness of the dishes, but with its own elegance and unique standard, Bụi not only conquers domestic diners but also unintentionally attracts foreign tourists who become regular customers. Conveniently located in the city center, with a luxurious design space and especially owned by one of the most famous Miss Vietnam but Bụi’s prices are not as expensive as people think. Compared to similar Vietnamese restaurants with style and dishes in Ho Chi Minh City, Thúy’s restaurant has a more affordable price. The menu of over 100 dishes at the restaurant has prices ranging from 30,000 to 120,000 VND. At Bụi restaurant, you can choose to enjoy dishes from all three regions with over 100 extremely diverse dishes. The crispy chicken is marinated just right and fried skillfully to bring a crispy yet not dry, not tough but fresh and tender, rich flavor sensation. The crab spring rolls are crispy and fragrant with seafood flavors. This dish, combined with vermicelli, dipping sauce (fermented fish sauce), herbs, is not only suitable for hot days but also for cool days. Diners born and raised in the 20th century will surely be nostalgic and emotional when coming to this Saigon restaurant. All items here seem to have been tinted with time, old but we cannot find them in the present world. On the wooden shelf, Mai Phương Thúy has cleverly arranged items from the past such as: ceramic bowls or plates with faded glaze, ceramic medicine jars, teapots, etc. All seem like a slow-motion film helping us slowly reminisce about the past. Do you remember the aluminum cans used by old families as spice containers, mouthwash cups, medicine containers, etc.? At Bụi restaurant, there are hundreds of such aluminum cans with the function of a container for spoons, plates, salt. On the ceiling, the fishing nets emit a warm golden light throughout the space from inside the house to the garden. Outside the garden, we can sit and enjoy a hot cup of tea, lean back on a comfortable sofa chair, listen to the birds singing. Amidst the bustling Saigon, where can we find a peaceful and airy place like this?
Mai Phương Thúy is someone who loves the presence of nature, so the fresh flowers at Quán Bụi are changed daily, including lotus flowers, baby flowers, sunflowers, etc. In the cozy space, the blooming flowers brighten up the area without any lights being able to do so. The dishes that the beauty queen adds to the menu are truly Vietnamese and familiar for daily meals, such as sour soup, crispy fried meat, tofu with salted eggs, braised fish, spring rolls, stir-fried morning glory with garlic, etc. This is all the dedication that Mai Phương Thúy and her team have built over the years. Every day, many foreign tourists and local guests come to Quán Bụi Ngô Văn Năm to enjoy the space and food here. If you have the chance, you should definitely come here once and admire this spiritual child of Mai Phương Thúy.

Customer reviews when visiting the restaurant:
-The restaurant space is cozy, warm, and close to Christmas so there is a festive atmosphere. Normally, it’s just iced tea but I can still smell the fragrant corn beard. The menu consists of unique dishes (mostly familiar to Southerners, but these are specialties of Hanoi).
-The restaurant offers a variety of Northern dishes, with a wide selection of hotpots, all nutritious dishes like frog hotpot, bird hotpot… the sticky rice here is also delicious, with a perfect taste. The banana flower snail dish was new to me but the taste was amazing. The space is beautiful, with strong air conditioning. There are also 2 upper floors, with a sitting style. Parking is right next door, priced at 15k per vehicle.
-Our team ordered Ke bird hotpot, braised chicken to warm up. Ke bird is usually eaten in the countryside, the hotpot is quite rich, tastes good, served with noodles and vermicelli. The braised chicken is also delicious and nutritious. The iced tea has a unique taste. The staff is very nice and attentive.
-The restaurant is easy to find, with one floor and one spacious, clean, and cool floor. The staff is attentive and friendly. The food is diverse and unique. This was my first time trying the banana flower snail dish, the taste was quite different from what I expected, sour and light, creamy, with plenty of snails, soft beans, and tender banana pieces, overall this dish is quite special, worth a try.
